This is divine, quick, easy and we never seem to make quite enough. Next time you’re having friends over, or want to impress someone, make this salad, its ridiculously easy and delicious.
250g pasta, (the twisted/curly shapes are fun) cooked according to packet instructions
1 punnet cherry tomatoes, cut in half
1 hand full baby spinach chopped
1 hand full feta cheese, cubed
1 red onion, thinly sliced
1 large red pepper, seeded and thinly sliced (yellow gives it a great colour, but our family prefers red)
1 punnet button mushrooms, sliced
1/2 packet olives, pitted
60ml balsamic vinegar (get a good quality one, not too thin, it really does make a difference)
60ml olive oil
1 tbsp brown sugar
Salt & Freshly ground Black Pepper to taste
6 slices of salami, thinly sliced
What to do
In a large bowl, mix together the balsamic vinegar, olive oil and brown sugar with a fork.
Add the pasta and then the rest of the ingredients.
Mix really well, check taste and add salt and pepper accordingly and serve.
And, you’re done! Now serve it up and enjoy the compliments
Great with crusty bread, steak, chicken, fish, or on its own.
A big glass of Merlot is great as a ‘side dish’.
